– Wheat, corn or mixed Gofio La Molineta

In the Canary Islands we accompany a good Canary Island casserole or fish stew with “Scalded Gofio”. Place the Gofio into an earthenware bowl; add the very hot stock from the stew, and mix till achieving a thick paste (not dry). Then fray a piece of meat, bacon or fish and finish mixing, sprinkling with a good Canary Island mojo [sauce].
