Gofio mousse


– 500 ml of whipped cream

– 3 eggs

– 3 spoonfuls of wheat Gofio La Molineta – Normal toasting

– 4 spoonfuls of sugar (to taste)

– 100 gr of ground almonds

– The zest of a lemon

– A pinch of cinnamon or vanilla


Beat the three egg whites until stiff. Add carefully the whipped cream, the Gofio, the sugar, the cinnamon (or vanilla); the ground almonds and the lemon peel.

Pour the mixture into a dish and serve it very cold.

A Canary Island delight!
