Gofio Sponge Cake


– Two lemon flavoured yogurts (250 gr)

– 250 gr of wheat Gofio La Molineta

– 1/2 l of milk

– 20 gr of powdered yeast

– 400 gr of sugar

– 250 gr of flour

– 4 eggs

– 100 gr of melted butter or oil


Mix the Gofio and the flour (reserve some for flouring the cake tin) and the yeast. Separate and mix the rest of ingredients and then little by little add the first mix, previously sieved.

Grease the mould with butter or oil and flour. Pour in the mixture and bake in oven (previously heated) for about 30 minutes at 180 ºC. When half baked, paint with egg and, lastly, after cooling, powder with sugar.
